Avocado Egg and Sausage Bakes

Ingredients

  • 2 avocados
  • 4 eggs
  • smoked salt to taste
  • pepper to taste
  • ½ pound cooked ground sausage (we like jalapeño sausage)
  • sharp cheese, shaved

Instructions

Preheat oven to 400°F. Cut avocados in half. Remove pit. Place avocado in a shallow baking dish, open side up. Crack an egg into each avocado half and sprinkle with smoked salt and cracked pepper.

Bake in oven for 17-20 minutes, depending on yolk preference.

Once done, top with cooked sausage and shaved cheese. Serve hot.
