- 2 cups heavy cream
- 2 cups sweetened condensed milk
- 1 teaspoon pure vanilla extract
- 1 pint fresh blueberries
- 3 ounces fresh mint leaves
Place the heavy cream, sweetened condensed milk and
vanilla extract into a food processor or blender. Using
high speed, blend the ingredients together for 30
Wash and drain the fresh blueberries. Wash, drain
and blot the mint leaves with paper towel. Roughly
chop the mint leaves.
Add the blueberries and mint leaves to the mixture
in the food processor or blender. Use the pulse button
10 to 20 times to incorporate the berries and mint with
the liquid but be careful not to over process; retain a
slightly chunky appearance.
Pour into ice pop molds and freeze at least 12 hours.
