- 12 large hard-boiled eggs
- ⅓ cup mayonnaise
- 1 tablespoon chipotle seasoning
- ½ pound ground chorizo
- fresh cilantro
Peel eggs and cut in half. Spoon yolks into a bowl and mix in mayonnaise and chipotle seasonings. Mix with fork until smooth.
Arrange the egg white halves on a plate. Spoon mayonnaise mixture into each egg half. Cover and chill eggs for at least an hour, or up to one day.
Top with chorizo sausage and a cilantro leaf. Sprinkle with paprika.
