In a medium bowl, mix flour and baking powder together.
In a small bowl, beat the eggs and milk together well. Pour egg mixture into dry ingredients and stir in the vanilla, maple syrup, coconut and white chocolate chips. Let rest 10 minutes.
Preheat skillet over medium heat and melt coconut oil to grease skillet. Ladle a small amount of the mixture into skillet. Cook until bubbles appear on the top and flip, cook for 2 more minutes. Top with powder sugar, maple syrup or chopped nuts.
