- ¼ cup red wine vinegar
- ¾ cup virgin olive oil (not extra-virgin)
- 1 teaspoon mustard
- 1 clove garlic, mashed and minced
- 1 tablespoon oregano, fresh minced or dried
- 1 pinch salt, to taste
Mix marinade ingredients in a jar with tight-fitting lid, and shake to emulsify. This can also be completed in a bowl with a wire whisk.
