Joe’s Fresh Wild-Caught Bahian-style Salmon

Ingredients

  • 4 (6 ounce) salmon fillets
  • ½ orange, juiced
  • ½ lemon, juiced
  • 1 whole orange, zest
  • salt and pepper
  • 2 tablespoons brown sugar
  • 1 tablespoon chili powder
  • 1 clove garlic, minced
  • 2 tablespoons butter, melted

Preparation

Preheat the oven to 425° F.
 
In a shallow dish combine juices, salt and pepper. Add salmon and coat with marinade. Stand at room temperature for 20 minutes, turning fillets once. Line a baking pan with aluminum foil, lightly grease with melted butter. In a small dish, combine orange zest, brown sugar, chili powder and garlic. Rub over salmon. Place on baking pan. Drizzle with any remaining melted butter. Bake 8 to 12 minutes.
