Heat a sauté pan with one tablespoon olive oil over medium heat. Stir in sweet potatoes and mushrooms cooking until tender (about 7 minutes). Mix in cumin, garlic powder, and chile pepper and cook for another 2 minutes. Set aside. Pull apart the bib lettuce leaves and start to building the lettuce wrap. Place mushroom and sweet potato mixture on the lettuce wrap, add toppings of choice, top with feta cheese, green onions and cilantro. Enjoy!
