- 8 red potatoes, chunked, skin on
- ¼ cup olive oil
- 1 tablespoon minced garlic
- 2 teaspoons salt
- ½ teaspoon black pepper
- Fresh shaved Parmesan cheese
- Malt vinegar
Preheat oven 375℉. Place parchment paper on a cookie tray.
Cut potatoes into large chunks. Place into a medium bowl. Pour olive olive over potatoes, add minced garlic and sprinkle with salt and pepper. Mix until potatoes are coated.
Place potatoes in a single layer on the parchment paper. Cook in the oven for 30 minutes. Remove potatoes from oven and take a spatula with no holes and push down each potato to smash them.
Sprinkle shaved Parmesan on each potato. Place them back in the oven for 20 minutes to crisp up and become golden brown. Remove potatoes from the oven and sprinkle each potato with desired amount of malt vinegar.
