- 2 pounds yellow and red cherry tomatoes
- ¾ cup brown sugar
- 1 tablespoon apple cider vinegar
- 1 tablespoon balsamic vinegar
- 1 tablespoon minced ginger
- ¼ teaspoon cinnamon
- ⅛ teaspoon nutmeg
- ⅛ teaspoon ground cloves
- ½ teaspoon cayenne
- 1 teaspoon salt
Mix together and mash all ingredients in a saucepan and bring to a boil over low heat. Continue to cook until the mixture is thick (about 30 minutes). Remove from heat and cool. Store in airtight container of a week.
Ideas to add to the jam: bacon bits, caramelized onions, tarragon or thyme.
Spread over a crostini with goat cheese for a delicous appetizer.
