Vegan Cast Iron Skillet Apple Crisp

Here in Indiana we are lucky to have a nice variety of early apples and you can find some of them now! Gear up for autumn with this fantastic vegan apple crisp, just leave the sweater in the closet for now.

Ingredients

Crisp Topping
  • ½ cup oat flour
  • ½ cup almond meal
  • ½ cup rolled oats
  • 1 teaspoon cinnamon
  • 1 Tablespoon brown sugar
  • ¼ cup maple syrup
Filling
  • 3 granny smith apples [diced]
  • 2 Tablespoons coconut sugar
  • 11/ 2 Tablespoons tapioca flour
  • 2 teaspoons lemon juice
  • 11/ 2 Tablespoons maple syrup
  • 1 teaspoon cinnamon
  • pinch of nutmeg
  • pinch of sea salt

Preparation

Preheat the oven to 350º.

Mix the filling ingredients (minus the apple) together in a large bowl. Stir until combined. Add the apples in and coat them in the mixture. Allow the apple to soak for 5-10 minutes stirring occasionally.

In the mean time, mix together all of the topping ingredients in a large bowl. Spray or grease an 8" cast iron skillet. Pour in the filling. Add the crumble topping on top.

Bake for 45 minutes or until the apples are soft. Enjoy!
