Fabio Viviani to Open a Restaurant in Carmel's Market District
Celebrity chef Fabio Viviani is bringing his expertise for delicious and local food to Indiana with his new restaurant Osteria by Fabio Viviani, set to open in Carmel’s Market District grocery store later this year.
Osteria by Fabio Viviani will offer guests a casual, yet refined Italian dining experience located at 11505 N. Illinois St, adjacent to Market District. Their emphasis will be on locally sourced ingredients obtained through Market District and unique dishes curated just for the restaurant.
“There are some Italian staples you’ve got to have, but the dishes will be created with the local produce in mind,” Viviani said. “It’s going to resemble some of the other restaurants we have, but it is going to have very much its own identity.”
Some of those staples, Viviani mentions, are fresh pastas made from scratch, an assortment of braised meats, and his famous meatballs. But Carmel’s Osteria, which means a simple but delicious Italian restaurant, will feature dishes you can’t find anywhere else.
“Some things you find in Carmel in our restaurant, you won’t find in Oklahoma or Miami or New York where we have other restaurants,” Viviani said.
Known for his appearance on the reality cooking show “Top Chef”, Fabio Viviani is a celebrity chef, best-selling cookbook author, Television Host and owner of Fabio Viviani Hospitality Group. Market District’s Osteria by Fabio Viviani will become a part of more than three dozen establishments opened by the company across the United States since 2005.
His new restaurant will replace Table by Market District as the grocer’s in-house restaurant. The space is being completely remodeled, bringing a more modern and clean look with accents that nod to the restaurant’s Italian roots.
“We wanted to create a spot that fit well for crowds at different times of the day,” Viviani says. “Although we may start with dinner only, after that we will be opening for brunch, lunch, and so on.”
Viviani says he’s excited for the restaurant to open in the Carmel neighborhood, wanting it to have a friendly and communal feel. And as for opening a restaurant in partnership with a grocery store like Market District, the chef says it’s like, “for a kid to have Disneyland in their backyard!”
“[Market District] is know to have very high quality, very locally targeted produce, seafood, and meat,” Viviani says. “That’s what we want to do. We want to try to get probably 75% of our ingredients through Market District connections.”
The other 25%, Viviani says, will still be of the highest quality, imported from Italy or sourced from other trusted partners.
A subsidiary of Giant Eagle Inc, Market District is a diverse and unique shopping experience geared towards foodies. Although the store has 13 locations throughout the midwest, each store prides itself on being plugged into its surrounding community.
“This is our first sit-down restaurant in Indiana... and it is exciting,” Viviani says. “Especially after 2020, which was a different year for hospitality and restaurants in general, it’s good to get back to work and it is good to start with a bang.”
