Q & A with Anne Dickey
Anne Dickey is a Registered Dietitian. Always an advocate for a plant-centric diet, she decided to adopt a 100% plant-based diet for health concerns. It didn’t take long for her to become passionate about this way of living. It instigated a cascade of positive life changes that ultimately, enabled her to heal herself naturally. She created a social media following as a way to spread the health benefits of the plant-based diet. EI: What about food inspires you?
AD: It may sound corny or cliche' but i'm truly inspired by fresh vegetables and fruits. Not only because they are the most nutrient-dense foods on the planet, but also because they are so versatile and can be used in so many different ways! I also really love how visually appealing fruits and vegetables are and how much color and vibrancy they add to dishes.
EI: What kitchen tool can you not live without?
AD: I can't live without my NutriBullet! It serves so many purposes. I use it to make my daily smoothies, to grind oats and nuts, and to make sauces and dressings.
EI: What is your favorite recipe to make and why?
AD: My favorite recipe has to be my chocolate avocado smoothie. Avocado gives smoothies such an amazing creamy and rich texture. I just blend frozen bananas and blueberries with 1/2 avocado, plant milk, raw cacao powder, and some other optional ingredients like Maca, Moringa, cacao nibs or even some plant-based protein powder for some added flavor and sweetness. I love this recipe a. because I am obsessed with dark chocolate and this smoothie kind of reminds me of chocolate mousse/pudding and b. because it is filling and satisfying and makes for a quick meal.
EI: If you could eat just one meal for the rest of your life - what would that meal be?
AD: Ohhh such a hard decision, but I will go with tacos made with corn tortillas, black beans and avocado and paired with a gigantic green salad.
EI: Who is your hero in the food world?
AD: Dr. Michael Gregor for sure! Although he isn't a chef, he runs a website "nutritionfacts.org" which is dedicated to providing evidenced-based nutrition information. He also just released a cookbook called the "How Not to Die" cookbook and I can't wait to get it!
