- ½ cup carrot juice
- ½ Thai coconut*
- 1 teaspoon coconut oil
- 1 frozen banana
- ½ cup frozen mango
- Remaining coconut meat from coconut**
Instructions
Blend until smooth.
* Thai coconuts are easily cracked open using the bottom of a large knife blade. Hack a square at the top of coconut and strain water out using a fine strainer.
** Scrape remaining meat from coconut with a spoon. Make sure you pick off the hard pieces of shell.
