Ingredients
SERVINGS: 9 medium sized muffins
- 3 Overripe bananas
- 1 egg
- 3/4 cup sugar
- 1 tablespoon flax seed
- 1/4 cup melted butter
- 1/4 cup coconut oil
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup flour
- 1/2 cup quick oats
- 1/2 teaspoon salt
- 1/2 cup of chocolate chips or shredded coconut* optional
Instructions
Preheat oven at 375℉.
Mash the overripe bananas in a medium sized bowl and add the sugar. Add the egg and beat slighly then slowly add the melted butter and stir until mixed. Pour in all of the dry ingredients allowing them to sit for a few minutes for the oatmeal to become wet and then stir, but do not overmix. Batter will be slightly lumpy. Add in the optional coconut or chocolate chips and stir until just mixed.
Bake in oven for 22 minutes or until golden brown. Muffins freeze well.
