Ingredients
- ¼ cup barley, cooked
- 2 cups cooked black beans
- 1 cup roasted corn
- ¼ cup peppers, chopped
- ¼ cup tomato, chopped
- ¼ cup cilantro, chopped
- 1 teaspoon cumin
- 2 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon pepper
- ¼ cup vinegar
- 2 tablespoon olive oil
Instructions
Serves 4–6
Mix all ingredients together. Allow to sit for 1 hour. Serve chilled as a salad, dip or salsa.
