Ingredients
- ½ cup dried large pearl tapioca
- 1 cup strong brewed mint tea
- 2 tablespoons maple syrup
- 2 ounces bourbon
- Angostura bitters
- Fresh mint
Preparation
Fill small pan with water and bring to a boil. Pour in dried pearl tapioca. Cook for 5 minutes. Remove, strain and rinse with cold water. Pour cooked tapioca into bottom of a tall glass. Fill glass with ice and add bourbon, maple syrup, tea and 2 dashes of bitters. Stir and garnish with mint. Stir and serve cold with a fat straw.
