Summer Corn Salad with Bagel Croutons

Ingredients

SERVINGS: 4-6 Serving(s)
  • 1 1/2 cup roasted corn
  • 1 cup cucumbers, diced
  • 1/2 cup scallions, diced
  • 1 cup grape tomatoes, sliced in half
  • 1/4 cup basil, chopped
  • 1/4 cup mint, chopped
  • Everything Bagel Croutons*
  • Salt and Pepper to Taste
  • Juice of 2 limes

Instructions

In a large bowl combine corn, cucumbers, tomatoes and scallions. Toss with lime juice and salt and pepper. Gentle stir in the basil and mint and allow salad to sit for 30 minutes to absorb flavor. Before serving toss with everything bagel croutons. Note: The croutons will become soggy if you save the salad and refridgerate - it is best to make fresh croutons if you have leftovers.

*To make the croutons take 1 everything bagel and chop into 1/2 inch pieces. In a skillet heat 3 tablespoons of oil and fry the bagel pieces turning them when they are brown on every side. This will take about 30 seconds on each side. Keep careful watch as to not burn the croutons.
