Ingredients
SERVINGS: 12 muffins
- 8 eggs
- 1/2 cup milk
- 1 cup spinach
- 1 cup red peppers, diced
- 1 onion, diced
- 1/2 teaspoon thyme
- 1/2 teaspoon cumin
- 1/2 cup asiago cheese
- salt and pepper
Instructions
Preheat over to 400°.
Spray muffin pan to grease and set aside.
Beat the eggs with the milk and salt and pepper. Blend in all of the vegetables and mix in the remainder spices. Fill muffin cups to the top. Sprinkle with cheese. Place muffin pans in the oven for 20 - 25 minutes or until slightly brown on top.
