Avocado with Cajun Corn and Tomatoes

This avocado toast is delicious and easy and has a little bit of kick.

Ingredients

  • ½ ripe avocado
  • ½ teaspoon fresh lime juice
  • salt and pepper
  • 1 teaspoon olive oil
  • ¼ cup fresh corn
  • 1 teaspoon cajun spice
  • 1 slice heavy bread (sprouted, oat, rye)
  • ¼ teaspoon chili powder
  • grape tomatoes, halved

Preparation

Cut up avocado in a small bowl. Add lime juice and a pinch of salt and pepper, mash until smooth.

In a small pan over medium heat, add olive oil and corn. Cook until slighty brown. Add cajun spice, stir. Remove from heat and set aside. Toast bread, spread avocado over toast and sprinkle with chili powder. Top with corn and tomatoes. Serve by itself or with a poached egg.
