Baked Salmon Meatballs with Pesto Sauce

Ingredients

SERVINGS: Makes 12 meatballs
  • 1 pound Sitka Salmon Shares Salmon Burger
  • ½ white onion, minced
  • ¾ teaspoon salt
  • ½ teaspoon white pepper
  • ½ teaspoon paprika
  • 1 tablespoon dried parsley
  • 1 teaspoon fresh garlic, minced
  • ¼ cup panko breadcrumbs
  • 1 egg, beaten
  • Olive oil
  • Fresh tomatoes, sliced
  • Pesto
  • Goat cheese (optional)
  • Balsamic glaze or vinegar

Instructions

Preheat oven to 350℉. In a food processor, add all ingredients except for the pesto. Pulse gently until the mixture is combined well.

With a melon baller or your hands, make firm meatballs. Place the meatballs evenly on a parchment-coated baking sheet. Gently brush each meatball with olive oil to prevent them from drying out.

Bake the meatballs for 7 minutes and gently turn them. Bake for an additional 7 minutes. To crisp the meatballs, place under broiler for 3 minutes.

Take a slice of tomato and spread a small amount of pesto on top of the tomato and place the baked meatball on top. Serve warm with optional goat cheese sprinkles and a drizzle of balsamic glaze.
