Dark Chocolate and Orange Breakfast Muffins

One of my favorite flavor combinations are that of orange and chocolate, dark chocolate. It beckons me back to the holidays when candied dip oranges were dipped in chocolate and given out as treats. These morning muffins will bring those combinations to the breakfast table for all to enjoy anytime of the year.

Ingredients

SERVINGS: 10-12 Serving(s)
  • 2¼ cups of all-purpose flour
  • 1 cup of raw sugar
  • 1½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ salt
  • 1 cup buttermilk
  • ⅔ cup coconut oil, melted
  • 2 eggs, beaten
  • ⅔ cup orange juice
  • 1 tablespoon orange zest
  • ½ cup dark chocolate chips
Glaze
  • ⅔ cups powder sugar
  • 1 teaspoon orange zest
  • 2 tablespoons orange juice

Instructions

Preheat oven to 400 ℉ and spray or grease muffin pans.

In a medium bowl shift flour, sugar, baking soda, baking powder and salt together and set aside.

In a smaller bowl combined the buttermilk, coconut oil, eggs, orange juice and orange zest. Stir and pour slowly into the flour mixture. Mix gently and only until combined. If you over mix it the muffins will not rise fully. After the mixture is mixed (it will be lumpy) fold in the chocolate chips.

Take an ice cream scooper and scoop full scoops into the muffin pans. The mix make fill  between 10-12 large muffins. Bake muffins for 16-18 minutes. Allow the muffins to cool slightly and top with the orange glaze.

For the Glaze
Mix in a bowl the powder sugar, orange zest and juice. The glaze should be thicker and if it is too runny ad more powder sugar. If you want to push the flavor a bit more, add 1/4 teaspoon of ground cardamom or nutmeg.
