Ingredients
- 2 1/4 cups flour
- 3/4 cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 1/2 teaspoons salt
- 1 tablespoon cinnamon
- 2 teaspoons ground ginger
- 2 teaspoons ground cardamom
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 4 eggs
- 3/4 cup milk
- 2/3 cup sour cream
- 2 tablespoons molasses
- 2 tablespoons sorghum
- 1 stick butter, melted
- Caramelized pears*
- Caramel sauce**
Instructions
1. Whisk together the flour, sugar, baking powder, baking soda, salt and all of the spices in a large mixing bowl.
2. In another mixing bowl, whisk together the eggs, milk, sour cream, molasses and sorghum. Then, add this mixture to the flour mixture and whisk until combined. Next, whisk in melted butter.
3. Using a ladle or measuring cup, transfer the batter to a hot waffle iron. Serve warm with caramelized pears and caramel sauce.
* To make caramelized pears: Heat 4 tablespoons butter and 1/2 cup brown sugar in a skillet until the sugar has disolved and a loose caramel forms. Slice 3–4 pears, add them to the pan and cook until they are translucent.
