Mango Coconut Sheet Pan Shrimp and Potatoes

Ingredients

  • 13–15 Sitka Salmon Shares spot prawns (or shrimp)
  • 1 bottle of Mango Coconut Sauce
  • 10 fingerling potatoes, chunked
  • 1 red pepper, sliced
  • ½ onion, sliced
  • 4 tablespoons olive oil
  • Salt and pepper

Instructions

Preheat oven to 400℉. Toss shrimp in sauce and set aside. In a medium bowl, add olive oil, potatoes, peppers, onions, salt and pepper together and toss until coated with evenly with oil.

On a sheet pan, spread the potato mixture evenly on one side and the shrimp on the other side. Bake for 20 minutes, or until the shrimp is opaque and the potatoes are crispy.
