New Orleans Styled Shrimp Étouffée

Ingredients

  • 5 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • ½ cup sliced green onions
  • 1 cup diced celery
  • 2 cloves garlic, minced
  • ¼ cup flour
  • ¼ cup tomato paste
  • 1 teaspoon Thai chili garlic paste
  • 2 cups vegetable broth
  • 1 teaspoon kosher salt
  • ¼ teaspoon coarse-ground black pepper
  • 2 tablespoons Cajun seasoning
  • 13–15 Sitka Salmon Shares spot prawns (or shrimp), deveined*
  • Jasmine rice
  • Fresh lemons

Instructions

In a sauté pan or Dutch oven, melt butter with olive oil over medium heat. Stir in onions, celery and garlic and stir for 4–5 minutes, or until soft.

Slowly stir in flour until combined then add in tomato paste, Thai chili garlic paste, broth, salt, pepper and Cajun seasonings. In sauce, add shrimp with or without shells* and cover. Simmer for 10–12 minutes and serve warm over jasmine rice with a squeeze of fresh lemon.

*Eating cooked shrimp shells can provide many health benefits. You may also keep the uncooked shells and make shrimp broth with them to reduce food waste.
