Toasted Pepita Rice with Avocado and Watermelon Radish by Edible Delmarva

What do we do when we are asked to stay home for weeks on end? We cook. We eat. We create. Comfort food gives us a peaceful feeling. It connects us in ways we can not explain. We are part of a bigger community who all are working hard to bring resources to their community and so we called on our edible friends for their favorite comfort recipe that you can make during your “stay at home time”- Maybe you will even become a bigger fan of our community and spread the love or maybe, just maybe you will learn to cook something new that will become a staple in your home. Whatever you do take the time to simple be in the moment. Oh and we believe cooking is therapy and that supporting local is a life style - make sure you continue to support your local producers, farmers and artisans who grow and make the fresh and sustainable ingredients of with which you cook.
