Ingredients
- 1 pound Sitka Salmon Shares salmon burger
- 2 tablespoons olive oil
- 1 fresh lime
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- ¾ teaspoon onion powder
- ½ teaspoon coriander
- ½ teaspoon salt
- Pico de Gallo or salsa
- Red cabbage, sliced thin
- Pickled onions (optional)
- 1 avocado, sliced
- Small tortillas
Instructions
In a sauté pan, sauté salmon burger in the olive oil 5–7 minutes, or until flaky. Add in the juice of 1 fresh lime and all seasonings and stir until all the meat is coated evenly with the seasonings.
To assemble the tacos, warm the tortillas and scoop a small amount of the cooked salmon mixture into each tortilla. Top with red cabbage, mango salsa, pickled onions and a slice of avocado.
*To make quick pickled onions, in a small saucepan bring together ½ cup water, ½ cup distilled white vinegar, 1 tablespoon honey, 1 teaspoon salt, 1 teaspoon peppercorns and ¼ teaspoon red pepper flakes to a boil for 5 minutes. In a pint jar, add 1 sliced red onion and the boiled mixture. Place lid on the jar and allow to cool for 30 minutes. Keep for up to 3 weeks in the refrigerator.
