Summer Grapefruit Margaritas

Ingredients

SERVINGS: 10 Serving(s)
  • Kosher salt
  • Lime wedges for rimming the glass and for garnish
  • 2 ½ cups silver or blanco tequila
  • 2 cups lime juice (approximately 3 lbs of limes)
  • 1 cup grapefruit juice
  • 2 teaspoons Mint Simple Syrup
Mint Simple Syrup
  • ⅓ cup sugar (I use organic cane sugar)
  • ⅓ cup water
  • 2-3 stalks fresh mint

Instructions

Mint Simple Syrup:

  1. In a small saucepan, combine the sugar and water. Warm the mixture over high heat,  stirring often, until the sugar dissolves. Off the heat,  Smack the mint stalks with your hands to release the oils and place in the simple syrup, stir for approximately one minute.  Remove the mint and discard.

  2. Let cool to room temperature before using. If making ahead, store covered in the refrigerator for up to 1 month.

Margaritas:

  1. To rim the glasses, place about 1 tablespoon of kosher salt on a small rimmed plate. Run a wedge of lime around the top of each glass. Dip the top of each glass at about a 45-degree angle in the salt and roll it from side to side until it covers the top.  Set the glasses aside

  2. In a large pitcher, combine the tequila, lime juice, grapefruit juice, and mint simple syrup. Stir until blended. Fill the pitcher with ice, stir again. Pour into individual glasses and serve. 

For One Margarita:

  1. Rim your glass with salt, fill a cocktail shaker with ice and add 2 ounces of tequila, 1 ounce of lime juice, 1 ounce of fresh grapefruit juice, and 2 teaspoons of mint simple syrup. Securely fasten the lid and shake like crazy, strain into an ice-filled cocktail glass.
